Fruity shrimp salad for Sunday night!

Its a combination of bright fruit and tender shrimp,Packed with healthful antioxidants and omega-3 fats, it will help to keep your cardiovascular system young.

Ingredients:
1 5oz package spring mix salad greens
1/2 pound medium shrimp, cooked, cleaned and peeled
1 cup canned mandarin oranges, drained
1 ripe medium avocado, peeled, pitted and sliced
1 cup sliced fresh strawberries
12 red seedless grapes, halved
1/4 cup finely chopped Vidalia onion
8 tablespoons of bottled balsamic vinaigrette

Directions:
On each of 4 plates, arrange a small bed ofchilled salad greens, shrimp, orange segments, avocado, strawberries, grapes, and onion. Drizzle each with 2 tablespoons of vinaigrette and serve chilled.

Makes 4 servings
Per serving: 188 calories, 6.6g fat, 0.8g saturated fat, 143.5mg sodium, 20.6g carbohydrates, 3.8g fiber, 8.1g sugars, 14.5g protein.
